Ingredient:
2 cups of frozen blueberries
1 cup of honey
3 cups of oats (I used quick oats)
½ teaspoon salt
½ cup Rich & Creamy Organic Melt
Organic Buttery Spread (or regular butter can be used too)
1 egg
Method
In a large skillet combine your blueberries & ½ cup honey over medium heat. Bring to a good simmer and turn down to medium-low heat to allow the blueberries to soften and turn into a preserves. You can also put into a magic bullet or food processor to blend any chunks and break up the exterior of the blueberries if needed. Return to pan and let them simmer until it turns into a thicker consistency.
In a separate large mixing bowl combine
the oats, salt, egg, ½ cup honey and stir well. Add your butter and cut into
the mixture using 2 butter knives until it resembles coarse crumbs.
Line a 8x8 pan with parchment paper (or
you could grease it if that's easier). Add half of the mixture to the bottom of
the pan and pack it down just a little bit. Pour your blueberry mixture over
the top of your crumble mixture and spread out evenly all the way to the edges.
Sprinkle the remaining crumble mixture over the top of the blueberry preserves
and pack down lightly.
Bake for 30 minutes or until it starts to
turn a golden brown on the top. Remove from the pan and let cool before you cut
into squares.
